"I am incredibly new to cycling. I started on my birthday this year (March 31) and haven't stopped. There is nothing in this life that I've fallen for as hard as cycling. I'm pretty sure I bike more than most people sleep."

 

And we can bet from Nicole's pic that Chicago winters aren't stopping her from riding!

 

 

OFF THE BIKE:

 

"Second place to cycling is cooking, which I also happen to do for a living. I love creating recipes, prepping ingredients, fancy knives, and kitchen utensils with only one use. Cooking and baking have also helped me to be friendlier with fractions and conversions.

 

Those are the two main points in my life, but the things that fill in the cracks are:

my dog, traveling, learning Spanish, hip hop, body modification, sushi!, spin class, reading, and learning.

 

I'm really excited for the opportunity to do this. It's intimidating, but in the best way possible.

 

And it's for a great cause, so how could I say no?"
